There’s this funkalicious Triple-D joint down in Syracuse, Funk ‘n Waffles, where they’re serving up all kindsa funky waffles—pulled pork, spinach Florentine, thanksgiving dinner…but one thing I don’t see on their menu is a potato waffle. OK, so check it out. They take a potato, and cook it in a waffle iron, then add cheddar cheese, bacon, sour cream and chives. It’s got the texture of a waffle but the taste of a baked potato—this dish is magically delicious, bro!
